Cooking and food odors in carpet: first aid now, and what actually gets it out

Do this now
Ventilate and run the A/C.
Vacuum carpet and sofa thoroughly, slowly.
For a small area, dab warm water with dish soap over the fabric, blot, rinse — the soap emulsifies the oil film.
Wipe hard surfaces and change the range-hood filter; a lot of the smell lives there.
Don't do this
Carpet powders and sprays; they sit on top of the oil.
Baking soda left in fabric; it clogs and doesn't lift oil.
Ignoring the range hood filter, which re-releases the smell every time the fan runs.
Why it works (and why the usual advice doesn't)
Cooking odor is airborne oil. Frying, curry, fish and bacon send an aerosol of fat and aromatic compounds into the air, and it settles as a thin film on carpet, sofa fabric and curtains — the room smells because the film keeps releasing it. Fragrance can't remove a film; a degreasing cleaner can. Carpet and upholstery near an open-plan kitchen carry most of it, and polyester and olefin, which attract oil, hold it hardest.
Will it come out? Depends on the fiber
The same cooking and food odors in carpet behaves differently on each carpet fiber. Flip a corner or check the closet remnant — the fiber is usually printed on the backing label.

High = normally removed fully. Medium = usually removed, some risk of a faint ghost. Low = partial at best. Permanent = dye or fiber damage; repair options only.
The Tampa factor
With the A/C running year-round, Tampa homes are sealed most of the year — cooking aerosol doesn't leave through an open window, it settles on the nearest fabric. Open-plan homes with the sofa facing the kitchen carry the most.
What we do when you call
Alkaline degreasing pre-spray on carpet and upholstery within the affected area, agitation, hot-water extraction and clear rinse. That removes the film that carries the odor in nearly every case. For heavy long-term cooking odor in a rental turnover we add a hydroxyl treatment. Curtains are usually the last thing holding the smell and we'll tell you if they are.
